Dina's Coming Home - Emily's Chicken Adobo

Episode 3 of Dina’s Coming Home and this month we are featuring my beautiful and longtime friend, Emily Shurmer! She is half Filipino and half English. We originally bonded over food and so this series was so fitting to learn about Emily’s mother’s heritage and find out how she became connected to her culture and identity.

Ingredients

  • 1 whole chicken cut into 8 pieces 

  • 5 cloves garlic 

  • 1 onion 

  • 1 bay leaf 

  • ½ cup soy sauce 

  • 2tbsp malt vinegar 

  • 1tsp coarse pepper 

  • salt , to taste 

  • Pepper, to taste 

  • 2tsp cornflour 

  • Oil


Method

  1. Add enough oil to coat the bottom of your frying pan. \

  2. Add the chicken pieces in skin side down, and begin to brown the chicken for around 4-5 minutes till the colour slight changes. Make sure to turn over and do the same thing.

  3. Then add in the garlic and onions and sautee for 2 -3 minutes till the onions have begun to sweat.

  4. Add in the rest of the ingredients, along with 400ml of water, place the lid on top and leave to simmer until the chicken is cooked. Roughly 20 minutes.

  5. In the meantime you can make some white rice to serve with it. 

  6. Once the chicken has cooked, take 2 tbsp of liquid and mix with 2tsp cornflour then pour back into the chicken, mix through well and leave on a low heat for 5 minutes to thicken the sauce.

  7. Serve with rice and enjoy!
